Under 100 calories a serving, our Strawberry Delight is diabetic- and weight-control friendly. I created this light, fruity, delicious dessert, as a special after-dinner treat.
Though lower calories, this dessert as no shortage of flavor. Made from sugar free, no-fat ingredients you can indulge a little.
1 package Sugar Free Jello Strawberry Flavor
1 cup boiling water
1 cup Washed, capped, sliced Strawberries
1 cup Non-fat Greek Yogurt
1/2 tub No Sugar Cool Whip (or other non sugar whipped topping)
Place strawberry gelatin in a medium sized bowl. Add boiling water and stir with wire whisk until gelatin is dissolved. (A couple of minutes). Cover and chill in fridge for roughly 30 minutes until it is starting to firm (but not completely firm). It should have the consistency of unbeaten egg whites.
Take gelatin from fridge and gently fold in Greek Yogurt and No Sugar whipped topping. (Either leave in bowl or spoon into dessert bowls at this time.)
Chill in fridge for several hours. (4+)
When firm, spoon into a pretty dessert dish, top with a little whipped topping or perhaps a whole strawberry and mint leaf.
