Each serving of this delicious dessert also holds 3 oz of raspberries, which are a powerhouse of nutrition. These little gems are an excellent source of vitamin C, manganese and dietary fiber. They also provide copper, vitamin K, pantothenic acid, biotin, vitamin E, magnesium, folate, and omega-3 fatty acids.

Raspberry Delight
1 cup boiling water
Black Cherry flavored gelatin
2 cups Non-Fat, Plain Greek Yogurt
12 oz Raspberries
½ of an 8 oz Tub of Sugar Free Cool Whip thawed
Instructions:
Add Black Cherry gelatin to a medium sized bowl. Stir in boiling water. Chill in fridge for about 30 minutes until the gelatin has the consistency of raw egg whites.
Wash raspberries and hold back 12 of the prettiest fruit.
Divide the rest of the raspberries between four dessert bowls.
Add Greek Yogurt to gelatin, stir.
Divide yogurt mixture between the four dessert bowls, covering the raspberries.
Top each dessert bowl with a dollop of cool whip.
Garnish desserts with 3 raspberries and mint leaves, if you like.
