White Chocolate Raspberry Mousse

Usually we are really well behaved with our food choices. But tonight, we will splurge a little. Not bad mind you, just a teensy-weensy naughtiness. But it will be so worth it!

No worries, the dessert will still be sugar-free, low-carb, and low-fat, but it is so heavenly that it positively MUST be sinful.


White Chocolate Raspberry Mousse

2 cups low-fat milk

1 pack Sugar-free Jell-O White Chocolate Pudding

1/4 tub of 8 oz Sugar-free Cool Whip

6 oz pack fresh raspberries

mint leaves for garnish


Pour milk into a small bowl. Add pudding mix to milk, and whisk until very well blended. Refrigerate 3 minutes. When the pudding begins to firm, fold Cool Whip under pudding.

Set 12 of the prettiest raspberries aside to garnish later.

Divide the rest of the raspberries into 4 dessert bowls. Spoon pudding over raspberries. Chill. Just before serving, garnish each dessert with 3 raspberries and small mint leaves.
