Almond Raspberry Yogurt

Who said that eating healthy has to be boring?

This yogurt delight is delicious as well as nutritious. Served as a breakfast side or as an after-dinner dessert, this wonderful treat is difficult to resist.

Low carb, no sugar, diabetic-friendly.

For Two Servings you need:

2 cups Greek yogurt

4 Tbsp orange juice

3 tsp sweetener*

½ cup toasted sliced almonds

1 pack (about 6 oz) Fresh Raspberries

Two dessert glasses of yogurt, topped with toasted almonds and raspberries on a granite counter.
A treat for two. A delicious as well as nutritious delight.

Directions:

Toast almonds and let cool. Hold back 1 Tbsp as a garnish.

Wash raspberries and hold back a couple of the prettiest ones as a garnish.

Blend yogurt, orange juice and sweetener until smooth and well combined.

(Remember to keep back 1 Tbsp toasted almonds.)

Create layers. Fill the bottom of two decorative glasses with half of the almonds each, half of the raspberries and half of the yogurt.

Garnish each yogurt delight with almonds and a pretty raspberry.

NOTES:

*Sweetener

You may use your preferred sweetener. (Sugar, Splenda, Stevia etc. or Just Like Sugar.)

I used Just Like Sugar because it is the healthiest option. Made from Chicory Root, Just like Sugar is a low-glycemic, natural sweetener.

To toast almonds:

Spray frying pan with cooking spray (I like coconut oil cooking spray) and toast sliced almonds for a few moments until lightly browned. Let them cool and hold back a few almonds as a garnish.
