Diabetic friendly, low-carb, these veggie noodles are great.
Zucchini noodles are delicious, nutritious, and easy to make. They are a wonderful substitute for pasta. I serve them with spaghetti sauce, Chicken Parmesan and other meats. They serve as a nutritious side dish to many meals.
Zucchini Noodles:
For one serving:
1 large Zucchini
1-2 cloves of Garlic
1 Tbsp Olive Oil (Or cooking spray)
Salt and Pepper (optional to taste)
Wash the desired amount of zucchini and follow the directions on your spiralizer to turn your zucchini into long ‘noodles’.

Peel and mince garlic and sauté in olive oil. Add the ‘noodles’ and cook for 2-3 minutes. I prefer mine al dente. Zucchini noodles get mushy if they are overcooked.
Salt, pepper if you so desire.

Note:
- If you do not like garlic. You can easily leave the garlic out.
- There are several versions of spiralizers on the market. Some simple, others extravagant. I bought a simple version and I am very happy and satisfied with it. It was inexpensive, is easy to use and easy to clean. No fuss. Just follow the directions on your spiralizer.
- Noodles are made within a couple of minutes. I thought they were easy and fun to make.
