Crock-Pot Chicken Soup – Low Carb

Chicken Soup to Warm Your Soul


1 whole chicken (about 3 pound), cleaned

2 large carrots, cut into chunks

3 stalks celery, cut into chunks

1 parsnip root, cut into chunks (optional)

1 leek, cut into chunks

I large onion, chopped

6 fresh parsley sprigs, chopped

1-2 lovage sprigs, chopped (optional)

2 teaspoons kosher salt

Crushed pepper to taste

2 Bay Leaves

Maggi (optional)

Water to cover


Place all ingredients in crock-pot. Cover with water. Cook on low for 6-8 hours.

When chicken is ready to fall off the bone, remove bay leaves and remove chicken. Take meat off bone.

Return meat to soup, add salt and pepper and Maggi to taste.

If you are not counting carbs, you may add cooked rice or noodles if you so choose.
