This after dinner dessert is a special treat at our house. At times, dieters and diabetics might feel like all desserts are off-limits. Not so! This little treat can be an occasional reward.

- Perfect occasional chocolate splurge, even my diabetic husband can enjoy without raising his blood sugar.

Heavenly Chocolate Mousse
1 ½ cups Almond Milk
1 pack Sugar Free Instant Chocolate Pudding
½ of an 8 oz tub of Sugar Free Cool Whip
1 Square (80% or higher Cocoa) Chocolate Bar (low to no sugar)
Stir pudding mix into milk. Make sure to stir until there are no lumps left. It will begin to thicken as you’re stirring. Gently lift Sugar Free Cool Whip into the pudding. Spoon into dessert bowls. Chill until ready to use.
Right before serving, decorate with rasped, good-quality chocolate. Enjoy!
